Throumba of Thassos Olives is a Greek product, which has been identified as P.D.O. (Protected Designation of Origin), due to its distinctive characteristics. Throumbes are olives easily recognized by their "wrinkled" look caused by salt curing.   

Combine the olives with fresh green salad, goat cheese and whole wheat rusk. Pour over the salad, olive oil, oregano and some thyme.
