September's Recipe: Pastítsio
(Ground Meat and Macaroni Bake)

Ingredients:
|
- 1 c. extra virgin olive oil
- 2 lg. onions, finely chopped
- 1 lb. ground beef
- 2-3 tomatoes, skinned, seeded, and diced
- 1 bay leaf
- 1 lb. macaroni
- 1-1/2 c. kefalotíri cheese
- salt & fresh ground pepper
- chopped fresh basil
For the béchamel sauce:
- 1/4 c. butter
- 1/2 c. flour
- 3 c. warm milk
- 3 eggs, beaten
- 1 c. grated kefalotíri cheese
- grated nutmeg to taste
- salt & fresh ground pepper

Preparation:
Heat the olive oil, soften the onions in it, then
brown the meat. Add the tomatoes and bay leaf,
together with some water. Season with salt and
pepper and simmer for about 30 minutes. Cook the
macaroni in boiling salted water until al dente,
drain, and leave to cool. Combine the macaroni with
the remaining oil, and spread half in a baking pan.
Sprinkle with grated cheese, spread the meat sauce
over the top, and cover with the remaining macaroni.
Preheat oven to 400°.
For the sauce, make a roux with the butter and flour, then gradually add the heated milk, stirring constantly. Remove the pan from the heat and stir in the eggs and grated cheese, leaving
some for topping and season with nutmeg, salt and
pepper, adding more warm milk if necessary.
Pour the
sauce over the macaroni and sprinkle with remaining
cheese. Bake for 20-30 minutes until browned on top.
Remove from oven, leave to cool slightly, and serve
garnished with chopped basil. Serves 4-6.

The sailing trio, Sofia Bekatorou, Sofia
Papadopoulou and Virginia

bright spot for Greece
during the 2008 olympics,
landing a bronze medal in
the Yngling class sailing.
"The competition was really
tough," Sofia Bekatorou
replied to a reporter. "On
the last day there were
eight boats fighting for
third spot, so from the
racing perspective it was
really difficult. And the
conditions were hard as
well. It was raining very
strongly, we had high winds
and big waves. But with
Sofia Papadopoulou and
Virginia Kravarioti, we kept
our patience during the
difficult parts and managed
to finish in third place and
that put us on the podium."
Taekwondo - Silver
Alexandros Nikolaidis won
the silver medal in Men's
Taekwondo. The 38 year old
Greek athlete also won the
silver in the '04 Olympic
Games. He was born in
Thessaloniki and was the
first torchbearer of the '08
Summer Olympics.

Featured Destination: Telos |
GEOGRAPHY: Telos, one of the smallest islands of
the archipelago, lies between Nisyros and Chalki to the
north of Rhodes. It is just 63 sq, km. in area with 63
km. of coastline, a population of 301 and is 290
nautical miles from Piraeus. There is a twice weekly car
and passenger ferry link with Piraeus and a connection
with Amorgos, the remaining Dodecanese and Crete. A
local service operates with the rest of the Dodecanese
and Samos and small boats make frequent trips to Chalki.
A hydrofoil also operates between Rhodes and Telos. The
island's capital is Megalo Chorio and its port is Skala,
the main harbour is Livadia. With its many monuments,
small settlements and lovely beaches, Telos is a
pleasant place for a quiet vacation.
HISTORY: Long before the first human inhabitants
reached Telos a species of prehistoric elephant
evidently lived there, skeletons of which have been
found in the Charkadion cave. Around 1000 BC the Dorians
settled on Telos and in the 7th century BC, according to
Herodotus, the Teliotes joined the Rhodians in founding
the colony of Gela in Sicily. In the 5th century BC
Telos became a member of the Athenian League but it
later switched its loyalties to Sparta and after 394 BC
became independent. It remained independent and
flourishing until at least the end of the 4th century BC
when it allied itself with Kos. Subsequently it remained
a dependency of Rhodes until its subjugation by the
Romans. Throughout the Roman occupation, Byzantine
times, up the 14th century, its fortunes declined. In 13
it was captured by the Knights of St. John at that time
was apparently known as (e) kopi. In 1522, after
countless attacks, it fin fell to the Turks and its
subsequent fate the same as that of the other islands of
Dodecanese.
SIGHTS - MONUMENTS: Megalo Chorio, t island's
capital is located in its interior, on north side, most
of its old houses being b amphitheatrically around the
slopes of the of Aghios Stefanps. Most of the finds from
t ancient cemetery are nowadays housed in t Rhodes
Museum and a bronze hydria is in t British Museum,
London. At the top of the are the walls of the castle of
the Knights a within its ruined interior one can see the
mains of a cistern and a large church with 1 century
wall-paintings. Other places of int est in Chorio
include the church of the Ta arch. In the centre of the
island is the no adays abandoned village of Mikro Chorio,
the northwest of which are remnants of a m dieval tower.
Southeast of here is Livadia km. from Megalo Chorio) the
second port the island where larger vessels drop anchor.
is a picturesque modern settlement with isla
architecture in a verdant environment. Oth places of
interest on Telos include the Mona tery of St. Anthony,
beside the sea, and of S Panteleimon, patron saint of
the island, dat to the 18th century and situated in a
particular ly beautiful region. It is enclosed within a
hig wall and there is a square tower at its en trance.
At Aghiosykia there is a ruined medi eval castle.
Telos has several sandy beaches with clea blue sea,
accessible on foot or by farm vehicle. The most
beautiful is Erystos (2.5 km. from Megalo Chorio), while
the bay of Livadia is particularly picturesque and the
swimming good at Aghios Antonios and Plaka. There is
small game in the island's mountainous interior,
particularly partridge. Visitors may stay in the hotel
at Livadia or in the few rooms for rent there and at
Erystos. Private yachts can replenish water supplies at
Livadia. |
